    1 cup of butter, softened, about 2 sticks
    3/4 cup of sugar
    2 large eggs, separated
    1 teaspoon of vanilla extract
    1 teaspoon of grated orange rind
    2 3/4 cups of all purpose flour
    2 cups of finely chopped butternuts or pecans
    Halved red and green candied cherries

    Preheat the oven to 325ºF. Grease baking sheets. Cream the butter and sugar together, then beat in the egg yolks, vanilla, and orange rind. Beat in the flour until well combined and a stiff dough is formed. Form the dough into small balls about 3/4 inch in diameter. Lightly beat the eggs whites in a small bowl. Dip the balls into the egg whites, then dip them into the chopped nuts, coating about three quarters of each ball. Place the dough balls, uncoated side down, about 2 inches apart on the prepared baking sheets. Press a candied cherry half into the top of each ball, flattening, the ball slightly. Bake the cookies for about 25 minutes, or until lightly browned and a toothpick inserted into a cookie comes out clean. Cool on wire racks and store in a tightly covered container in a cool place. Makes about 5 dozen cookies
