Carrot Cake Squares

1/3 cup Canola Oil
1/3 cup packed brown sugar
2 large eggs
1 cup flour
1 1/4 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. allspice
1/4 tsp. salt
1 cup shredded carrots
1/3 cup each walnuts and diced pineapple
Frosting:
8 oz. cream cheese (softened)
1 tbsp. unsalted butter
1/3 cup icing sugar
2 tbsp. toasted coconut
Preheat oven to 350F. Line bottom and sides of pan with foil, extending over sides. Spray with Pam.
In bowl, whisk oil, sugar and eggs, then add flour, cinnamon, allspice, baking powder, and salt. Add carrots, walnuts and pineapple. Spread in pan. Bake 1 hour at 350F until a toothpick comes out clean. Cool on rack.
Frosting: In bowl, whisk cream cheese, butter and icing sugar. Spread over squares, sprinkle with coconut. Lift foil to remove cake from pan. Cut into 9 squares.
