Cashew Butterscotch Bars

Crust:
1cup + 2 Tablespoons unsalted butter,softened + more to grease pan
3/4 cup + 2 Tablespoons packed brown sugar
1 3/4 teaspoons kosher salt
2 1/2 cups all-purpose flour
Topping:
3 1/2 Tablespoons unsalted butter,softened
300 gram bag butterscotch chips(1-1/2 cups)
1/2 cup + 2 Tablespoons light corn syrup
1 Tablespoon +2 1/2 teaspoons water
2 1/2 cups salted cashew pieces

Prep:
Center a rack in oven. Preheat oven to 350F. Butter bottom and sides of rimmed baking sheet (about 13in x 18in).
For crust
In large bowl with rubber spatula, beat butter and brown sugar together till smooth.
In small bowl, mix salt & flour. Stir into butter mixture, mixing till well combined and crumbly. (If dough is mixed till ball forms,crust will be tough).
Pat dough evenly but gently along bottom of prepared baking sheet, making sure not to pack dough down. Bake 5 minutes. With fork,prick dough deeply all over. Bake again till dough is lightly browned,dry,and no longer soft to touch, about 7 minutes. Transfer to cooling rack (Don't turn off oven)
For topping.
In large saucepan over medium heat, combine butter,butterscotch chips,corn syrup and water. Cook stirring constantly till butter and chips melt, about 5 minutes.
Pour topping over crust,using spatula to spread evenly to corners. Sprinkle with cashews; press down lightly.
Bake till topping is bubbly and cashews are lightly browned, 11 to 13 minute. Transfer to rack. Let cool completely before cutting into 2x3 inch bars.
Makes about 36 bars.
