    Chewy Almond Cookies

    1/2 cup each ganulated sugar and powdered sugar
    2 Tbsp. all-purpose flour
    1/4 cup egg whites (about 2 egg whites)
    1/4 tsp almond extract1 can almond paste (8 oz)
    1/3 cup sliced blanced almonds

    Recipe



    In small bowl of electric mixer, stir together the sugars and flour. Add egg whites, extract, and almond paste, broken into small chunks. Beat on medium speed until smoothly blended. Either spoon into a pastry bag with a large star tip, or pack into a cookie press with a large star opening. Press out on a large buttered cookie sheet, making rings about 3" in diameter. Make another ring on top of first so each cookie is about 5/8 thick. (If you have a star tip for cookie press, one ring is enough. Space cookies at least one inch apart. (Or you can dust hands with flour and roll dough into 5/8" thick strands about 6" long bringing ends together to make circle.) Sprinkle with almonds and bake in a 350 degree oven until golden brown, about 15 minutes. Transfer cookies at once with a spatula to wire rack. Will store up to three days in tightly sealed container. Makes 14 large cookies.
