Chocolate Almond Drops

3 cups whole almonds, toasted
1-1/4 cups granulated sugar
1 cup semisweet chocolate chips
4 egg whites
2 teaspoons almond extract

Preheat oven to 350 degrees F. Line baking sheets with parchment paper. In a food processor fitted with a metal blade, grind almonds and sugar. Add chocolate chips and pulse until finely ground. Add egg whites and almond extract. Blend until smooth. Drop by tablespoons or 1-1/4 inch cookie scoop onto prepared baking sheets, about 2 inches apart. Bake in preheated oven for 35 minutes or until firm, puffed and slightly cracked. Let cookies cool completely on pans on racks. Store in an airtight container.
