    Chocolate Chip and Mint Meringues

    Yield: 4 dozen

    3 egg whites
    1/2 teaspoon cream of tartar
    3 drops salt
    3/4 cup sugar
    2/3 dash green food coloring
    2/3 dash peppermint extract
    1 package semisweet mini chocolate chips -- (6-ounce)

    Preheat oven to 375F.

    Grease and lightly flour two cookie sheets. Beat egg whites with cream of tartar and salt until foamy. Gradually beat in sugar, 2 tablespoons at a time, until soft peaks form. Stir in food coloring and mint extract. Fold in chocolate chips. Drop meringues by teaspoonfuls, 1 inch apart, onto prepared cookie sheets.

    Place in preheated oven. Turn off heat
