Chocolate Salami

24 butter cookies - broken
12 ounces bittersweet or plain chocolate broken in to squares
2 sticks unsalted butter - softened
1/4 cup amaretto liqueur
2 egg yolks
1/2 cup slivered almonds - lightly toasted
1/4 cup ground almonds
Recipe
Place the cookies in a food processor fitted with a metal blade and process until coarsely crushed. Place the chocolate in a large heatproof bowl. Place the bowl over a sauce pan of barely simmering water, add a small chunk of the butter and all the liqueur and heat until the chocolate melts, stirring occasionally. Remove the bowl from the heat, let the chocolate cool for a minute, then stir in the egg yolks, followed by the remaining butter a little at a time.
Pour in most of the crushed cookies, leaving behind a good handful, and stir well to mix. Stir in the almonds. Set aside the mixture in a cold place for about 1 hour, until it begins to stiffen. Process the remaining crushed cookies in the food processor until they are finely ground. Pour into a bowl and mix with the ground almonds. Cover and set aside until serving time. Transfer the chocolate and cookie mixture to a sheet of lightly oiled wax paper, then shape into a 14 inch sausage with a spatula, tapering the ends slightly so that the roll looks like a salami. Wrap in the paper and freeze for about 4 hours until solid.
To serve, unwrap the "salami". Spread the ground cookies and almonds out on a clean sheet of waxed paper and roll the "salami" in them until evenly coated. Transfer to a board and let stand for about 1 hour before serving in slices.
