Chocolate and Peanut Butter Balls

1 cup chunky peanut butter
1 teaspoon vanilla
4-5 one ounce squares of semi-sweet chocolate
2 tablespoons heavy cream
1/4 teaspoon salt
1 cup powdered sugar
1-1/2 cups crisp rice cereal
1 cup Raw Peanuts, toasted and chopped*
1 tablespoon paraffin wax (optional)
1 tablespoon butter
Cream peanut butter and sugar. Add butter and vanilla to mixture and blend. Add salt and heavy cream. Mix well. Add peanuts and rice cereal. Mix and roll into balls the size of a walnut. Melt 4 or 5 squares of semi-sweet chocolate over hot water in double boiler with paraffin wax. Dip balls in melted chocolate to coat. Place on wax paper to cool. Store in refrigerator.
*To toast peanuts: Spread nuts in single layer in shallow pan. Place in cold oven. Toast at 350°F stirring occasionally until lightly toasted. Or spread nuts in a single layer in a large skillet over medium heat, stirring constantly until lightly toasted.
