1 cup - sugar
1 cup - brown sugar
1 cup - margarine or shortening
2 - eggs
3 cup - quick oatmeal
1 1/2 teaspoon - vanilla
1 1/2 cup - sifted flour
1 teaspoon - baking soda
1 teaspoon - salt
12 ounce - white chocolate chips
2 - packages Craisins


Mix sugars, margarine, eggs and vanilla together and bat until really fluffy. Sift together flour, soda and salt and add to the previous mixture. Add oats, white chocolate chips and Craisins. Drop by spoonfuls on ungreased baking sheet about 2 inches apart and bake for 10 minutes at 350 degrees. Do not overbake. They might not look done after 10 minutes, but they are.

They keep very well for several weeks and are often served to guests at Rossow’s Peregrine Point B&B Inn.
