    1 cup butter, softened
    1½ cups sugar
    1½ tsp. baking powder
    1/2 tsp. salt
    1 egg
    1 tsp. vanilla
    2½ cups all-purpose flour
    Green and yellow paste food coloring
    1½ tsp. finely shredded lime peel
    1½ tsp. finely shredded lemon peel

    In a large mixing bowl beat the butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder, and salt. Beat until combined. Beat in egg and vanilla. Beat or stir in flour.

    Divide dough in half. Add green paste food coloring and lime peel to one portion; knead coloring into dough until well mixed. Add yellow food coloring and lemon peel to second portion of dough; knead until well mixed. If necessary, wrap dough in waxed paper or plastic wrap and chill in the refrigerator for 1 hour or until easy to handle.

    Roll each color of dough into a 12¥8-inch rectangle (1/4 to 1/8 inch thick) between 2 pieces of waxed paper. Remove top pieces of paper and invert 1 rectangle on top of the other. Press down gently with hands to seal. Remove second waxed paper from top rectangle. Tightly roll up into a spiral log, starting from one of the long sides and using waxed paper as a guide. Wrap in waxed paper or clear plastic wrap. Chill in the refrigerator 2 hours or until firm.

    Using a sharp knife cut log into 1/4-inch-thick slices. Place slices about 1 inch apart on ungreased cookie sheet. Bake cookies in a 375° oven for 8 to 10 minutes or until edges are firm and lightly browned. Cool on cookie sheet 1 minute. Transfer cookies to a wire rack; cool. Makes about 48 cookies.
