Mocha Chocolate Chunk Cookies

2-1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons instant coffee granules
2 teaspoons coffee liqueur
1 cup sugar
1/4 cup [packed] dark brown sugar
1 cup butter, softened
2 large eggs
10-ounces semisweet chocolate chips or chunks
Preheat oven to 300 degrees.
In a medium bowl, combine flour, cocoa, soda and salt. Mix well with a wire whist and set aside. In a small bowl, dissolve coffee crystals in coffee liqueur and set aside. In a large bowl, blend sugars with an electric mixer at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl. Then add eggs and dissolved coffee granules and beat at medium speed until smooth. Add the flour mixture and chocolate chips/chunks and mix at low speed just until combined. DO NOT OVERMIX! Drop by rounded Tablespoons onto ungreased cookie sheet 2" apart. Bake for 20 to 22 minutes. Immediately transfer cookies to a cool, flat surface.
