    Makes 30 cookies.

    1 ½ cups all-purpose flour
    ¾ teaspoon baking soda
    ¼ teaspoon salt
    ½ cup (1 stick) unsalted butter, at room temperature
    ¼ cup lightly packed dark brown sugar
    ¾ cup granulated sugar
    1 cup smooth peanut butter
    1 large egg
    ½ teaspoon vanilla extract
    1 cup unsalted, roasted peanuts, coarsely chopped

    1. Preheat the oven to 375 degrees F., arranging racks in the middle and upper positions.

    2. In a medium bowl, stir together the flour, baking soda and salt. Set aside.

    3. Using an electric mixer, beat the butter, brown sugar and granulated sugar on medium speed for 15 seconds, or until blended. Beat in the peanut butter and then the egg until completely blended and smooth, about 30 seconds more. Beat in the vanilla. With the mixer on its lowest setting, gradually add the flour mixture, blending just to combine.

    4. Put the chopped peanuts in a small bowl. Form the dough into walnut-size balls and dunk their tops into the peanuts. Flatten and round the dough balls out a little, then place them, nut side up, on nonstick or parchment-lined cookie sheets at 2 ½ inch intervals. Bake for 13 minutes, or until the cookies are just set and lightly tanned, turning the cookie sheets around midway through baking. Set the cookies, sheet and all, on a rack to cool.
