Pumpkin Patch Cookies

2 cup - all-purpose flour
2 teaspoon - cinnamon
1 teaspoon - cardamom
1/2 teaspoon - nutmeg
1 teaspoon - baking soda
1 cup - butter softened
3/4 cup - brown sugar
1/4 cup - molasses
1 cup - pumpkin puree
1 - egg
1 teaspoon - vanilla
1 teaspoon - brandy extract
2 teaspoon - crystallized ginger
2 cup - dried cranberries
2 teaspoon - orange zest
1 cup - chopped walnuts or pecans
Sift together the dry ingredients in a small bowl and set aside. Cream together the butter and brown sugar until creamy, then add the molasses, pumpkin, egg, vanilla and brandy extract, beating until smooth. Add the dry ingredients. Stir in the crystallized ginger, cranberries, orange zest and nuts. Drop by rounded tablespoons onto lightly greased cookie sheets and bake at 350 degrees for 12 minutes or until lightly browned. Cool on racks and store in airtight containers. Makes 3-1/2 dozen cookies.
Tip: If your family doesn’t care for cranberries, substitute raisins.
