    1 cup sugar
    2 1/2 cups flour
    1 7 oz tube of almond paste
    2 tbs almond extract
    4 eggs seperated
    3 sticks of butter
    1/4 tsp salt
    red & green food coloring paste or liq.
    12 oz pkg. semi sweet morsels
    Rasberry,or apriocot jam or Nutella spread
    Wax Paper
    3 cookie sheet pans prepared with greased wax paper

    1. Seperate egg yolks from egg whites
    2. Beat egg whites till peaked and stiff
    3.Line wax paper that is buttered (butter side up) in pan .
    4.Melt 1 1/2cups butter
    5. Put almond paste in seperate bowl and break up into small pieces. Add 2-3 tbs almond extract
    6. ADD MELTED BUTTER THEN MIX IN 1 CUP SGAR THEN 4 EGG YOLKS, 1/4 TEASPOON SALT AND MIX TILL VERY CREAMY.
    7. add 2 1/2 Cups of flour and gently fold in egg whites
    8. Mix with electric mixer for about 3 minutes.
    9. Divide batter evenly into 3 bowls. Each bowl should have aprox. 1 1/2 cups batter in each. Add red food coloring to one until you have a deep red. Add green to the next bowl toll you have a green color. leave one bowl plain. You will have 3 bowls 1. red. 1 green 1 plain
    10. Put batter in pan with wax paper spread evenly. Do the same with other pan and batter. Bake 375* 15-25 mins. Batter will be dry on top and not shiny, and slightly brown on sides.
    11. Remove pans from oven. Place another piece of wax paper on top and then flip. Take off wax paper and than put back on top and flip to other side so that cookie faces up.
    12. Put on large sheet of wax paper when cooled.
    13.Spread jam or Nutella evenly over red layer. Than place white( plain ) layer on top. Add more jam or Nutella to that top layer and put green layer on top of that.
    14. Wrap in plastic wrap real good and place another large cookie sheet on top to cover it then place something heavy like books on top. Leave over night in frig or a cool place.
    15. Melt chocolate on top of double boiler. Spread on top of cookie and refrigerate till chocolate hardens.
    16. Cut cookies into petite four size servings .
