Toasted Coconut Cookies

1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
3/4 cup packed brown sugar
1/4 cup white sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 1/2 cups sweetened flaked coconut, toasted
Recipe
Preheat oven to 350 degrees F. Spread coconut on ungreased baking sheet and bake in preheated oven for about 10 minutes, stirring often until browned but not burned. Cool.
Combine flour, baking soda and salt.
In a separate bowl, cream the butter, and add sugars gradually, beating thoroughly. Add the egg and vanilla. Stir in the flour mixture until well blended. Stir in the toasted coconut.
Drop by rounded teaspoon full onto an lightly greased or parchment lined cookie sheet, about 3 inches apart. Bake for 8 to 10 minutes or until golden brown.
Makes 2 1/2 - 3 dozen cookies.
