    1/3 cup - shortening
    1 cup - lightly packed brown sugar
    2 - eggs
    1 teaspoon - vanilla
    1-1/4 cup - all-purpose flour
    1 cup - ground flax seed
    1 teaspoon - baking soda
    1/2 teaspoon - salt
    1 teaspoon - cinnamon


    Preheat oven to 350 degrees. In a bowl, beat together the shortening, sugar, eggs and vanilla. In a separate bowl, combine flour, ground flax, baking soda, salt, cinnamon, cloves and nutmeg. Gradually stir into liquid mixture. Stir in oatmeal, raisins, peel and pecans. Mix until combined. Form into 1-inch balls. Place on a greased cookie sheet, leaving 2 inches between cookies. Bake 10 to 12 minutes or until golden. Remove from sheet and cool.



    Yields 60 Cookies (2 inches)
