White Chocolate Cherry Bars

1/2 cup butter, cut into chunks
3 ounces Belgian white chocolate, broken into pieces
1 cup sugar
4 egg whites
1/2 cup dried tart cherries
3/4 cup all-purpose flour
1/4 teaspoon salt
1/2 ounce (about 2 tablespoons) Belgian white chocolate, finely grated
Recipe
Place the butter and white chocolate in a large microwave-safe bowl. Microwave the mixture at 70% power until almost melted. Using a wooden spoon, stir until completely melted. Stir in the sugar. Add the egg whites and mix well. Stir in the dried cherries; then add the flour and salt, mixing well.
Spread the mixture into a buttered 8 or 9-inch baking pan. Bake the bars in a 350 degree oven for 25 to 30 minutes, until lightly browned, and an inserted toothpick produces moist crumbs. Do not over-bake. Immediately sprinkle the bars with the grated white chocolate. Cool the bars and cut into 12 squares.
