    1/4 pound finely ground, blanched almonds
    1/4 teaspoon almond extract
    1/4 cup sugar
    2 egg whites, lightly beaten
    1 tablespoon confectioners’ sugar

    Recipe



    Preheat oven to 250 degrees.

    Cover baking sheet with foil and lightly grease.

    In medium bowl, combine almonds, almond extract, sugar and egg whites. Knead mixture into firm dough.

    With moistened hands, form dough into 1-inch balls. Arrange at least 1 inch apart on prepared sheet. Bake on bottom rack of oven for 55 to 60 minutes, or until done. (To prevent overbrowning, loosely cover cookies with foil.)

    Transfer to a wire rack. With a fine sieve, dust cookies with confectioners’ sugar while warm. Store in airtight container.





    Serving quantity: Makes 45.
