    1 cup shortening or margarine
    1 cup light brown sugar, packed
    2 eggs
    2/3 cup applesauce
    1 teaspoon of vanilla
    3 cups sifted all-purpose flour
    1-1/2 teaspoons of baking powder
    1 teaspoon of salt
    1/2 teaspoon of baking soda
    1/2 teaspoon of ground cinnamon
    1/4 teaspoon of ground cloves
    1 cup oatmeal

    Cream shortening and sugar until light and fluffy; beat in eggs, one at a time, then applesauce and vanilla, blending well. Sift flour, baking powder, salt, baking soda and spices; blend thoroughly into creamed mixture. Stir in oatmeal. Drop by heaping tablespoonfuls 2 inches apart on greased cookie sheets. Bake at 350 degrees F. 15 to 17 minutes or until centers are firm. With spatula, remove to wire racks to cool. Seal in airtight containers up to a month or freeze up to 6 months. Makes about 2-1/2 dozen of Grandpa sized cookies.
