Here's a great recipe - lots of good ingredients and a generous size. These are great warm but even better the next day. Wrap individually in holiday plastic wrap with a tag. Rustic ruffia and brown paper tags give the western look - after all, they're buffalo chips.
List of Ingredients
1 cup melted maragine
1 cup melted butter
2 cups granulated sugar
2 cups packed brown sugar
4 large eggs
2 tsp vanilla
4 cups all purpose flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 cups old-fashioned rolled oats
2 cups corn flakes
2 cups milk chocolate chips
2 cups coarsely chopped walnuts
1 cup shredded coconut
Recipe
In a large bowl or the bowl of a stand mixer, beat melted margarine, butter and sugars together until creamy.
Add eggs and vanilla and beat again until well combined.
Stir in the flour, baking powder, soda and salt.
Add the remaining ingredients, blending well.
Using a 1/3 cup measure or an ice cream scoop with a 1/3 cup capacity, drop three scoops of dough onto a baking sheet.
Bake at 350 degrees for 17-18 minutes.
Cookies should be brown around the edges but slightly soft in the center.
Two pans can be baked at once it you rotate the pans on the oven racks halfway through the baking time.
Makes 24 large cookies.
