    1/2 cup butter or margarine, softened
    3/4 cup sugar
    1 tablespoon vanilla
    3 eggs
    3 cups flour
    2 teaspoons baking powder
    1 cup miniature butterscotch chips
    6 tablespoons miniature butterscotch chips, melted

    Recipe



    Preheat oven to 350 degrees.

    Lightly spray large baking sheet with nonstick cooking spray.

    In large bowl, beat butter and sugar until well-blended. Beat in vanilla and eggs. Combine flour and baking powder. Add to wet ingredients. Mix well. Stir in 1 cup butterscotch chips.

    Shape dough into 2 (10-inch) rolls 5 inches apart on prepared sheet. Flatten each to 3-inch width. Bake for 20 to 25 minutes, or until set and lightly golden brown. Cool for 10 minutes.

    Cut loaves diagonally with a sharp knife into 1/2-inch slices. Arrange cut side down on cookie sheet. Bake for 8 to 10 minutes, or until bottoms begin to brown. Turn and bake for 5 minutes, or until browned and crisp. Cool completely. Dip tops into melted butterscotch chips. Stand upright to dry.

    Serving quantity: Makes 3 dozen.
