Oatmeal Butterscotch Pudding Cookies

1 cup butter melted[no subs please]
1 cup light brown sugar
1/4 cup sugar
6 oz pkg caramel or butterscotch pudding mix
1 1/2 tsp vanilla
1/4 tsp maple extract
2 eggs
2 tbs water
2 cups quick cooking oatmeal
1 cup rolled oats
1 cup flour
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup flaked coconut
1 cup butterscotch chips
1 cup semi sweet chocolate chips
1 cup chopped pecans

Pam your cookie sheets
In a lge mixing bowl stir together the melted and cooled butter both sugars pudding mix and both extracts mixing well
Stir in eggs and water mixing well
In an other bowl mix together the oatmeal rolled oats coconut flour baking soda and salt
Mix the dry ingredients into the egg butter mixture stirring well to combine
Fold in baking chips and pecans
Chill the dough for 30 min
Preheat oven to 350o
Remove from fridge and shape into balls 2 tbs each
Place on baking sheet and press dough slightly
Bake for 11-13 min or until JUST set and golden brown around the edges.
