Peanut Butter Blondies

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking
1/2 teaspoon salt
1/2 cup nonfat sour cream
1 cup smooth peanut butter
1/2 cup applesauce
1 tablespoon vanilla extract
1 1/2 cups light brown sugar
1 large egg
Recipe
Preheat the oven to 350 degrees F. Butter the bottom and sides an 11x7-inch baking pan. Dust the pan with flour and tap out the excess.
In a large bowl, sift together the flour, baking powder, baking soda, and salt and set aside.
In a separate large bowl, use an electric mixer to beat together the sour cream, peanut butter, applesauce, and vanilla. Add the brown sugar and then the egg and mix until well incorporated. Fold In the dry Ingredients and, when well combined, pour into the baking dish.
Bake for 15 to 20 minutes, or until an inserted toothpick comes out clean. Do not overbake. Allow to cool completely before cutting into bars.
