Peanut Butter Oaties

2 cups uncooked old-fashioned rolled oats
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup chunky peanut butter
1/2 cup unsalted butter, softened
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
3 large eggs, at room temperature
1 Tbs. vanilla extract
2 cups milk chocolate chips
1 1/2 cups shredded coconut

In a large bowl, stir together oats, flour, baking powder, and salt. In another bowl, using a hand-held electric mixer set at medium speed, beat peanut butter, butter, and sugars until well combined. One at a time, beat in eggs, beating well after each addition. Beat in vanilla. Gradually beat in oat mixture until well combined. Using a wooden spoon, stir in chocolate chips and coconut.
Drop dough by heaping tablespoonfuls (each cookie should contain about 2 Tbs. dough) onto an ungreased baking sheet, leaving about 1 inch between mounds of dough. Bake one sheet at a time, for 15 to 18 minutes, or until cookies are lightly browned (the cookies will not spread much). Remove baking sheet to a wire rack and cool for about 5 minutes. Using a metal spatula, transfer cookies to wire racks and cool completely. Repeat until dough is used. Store cookies in an airtight container.
