    4 onions, unpeeled
    4 potatoes, scrubbed but unpeeled
    3/4 cup oil
    4 tablespoons white wine vinegar
    Salt

    Place the onions and potatoes in the embers of a fire to bake. When they are tender, after about 45 minutes, remove the skins and eat them while they are still warm, dressed with the oil and vinegar, and seasoned with salt.

    Serves 4
