Balsamic Roasted Onions

3 lrg sweet onions (about 1 3/4 lbs. I used Vidalias)
Cooking spray
1/4 cup balsamic vinegar
1 tbsp olive oil
1 tsp dried thyme
1/2 tsp dried basil
1/4 tsp salt
1/8 tsp pepper
Recipe
Preheat oven to 450F.
Peel onions, leaving roots intact; cut each onion into 6 wedges. Place onions in an 11 x 7 inch baking dish coated with cooking spray.
Combine vinegar and other ingredients in small bowl; pour vinegar mixture over onions, tossing gently to coat.
Cover and bake 25 minutes at 450F. Uncover and cook 45 minutes or until tender (you may want to stir a couple of times in here to prevent sticking and to brown more evenly).
Makes six 1 cup servings
