    Basil Potato Salad

    3 lb small red potatoes, quartered
    1/3 c olive oil
    3 T red wine vinegar
    1/2 c finely chopped fresh basil
    1/4 c finely chopped onion
    2 garlic cloves, minced
    1 t salt
    1/4 t black pepper

    Recipe



    Place the potatoes in a steamer over simmering water.
    Cover; cook until tender, 20-25 minutes.
    Let cool for a few minutes.
    In a large bowl, whisk together the oil and vinegar.
    Stir in remaining ingredients.
    Add the potatoes and toss to coat.
    Serve right away or refrigerate for up to 1 day.
