    List of Ingredients




    2 pounds red potatoes
    3 tablespoons onion, sliced paper thin
    3 hard-boiled eggs, coarsely chopped
    1 green pepper, seeded and finely chopped
    2 stalks celery, chopped
    2 tablespoons pimento, finely chopped
    2 tablespoons sliced ripe olives
    1 tablespoon finely chopped Italian parsley
    2 tablespoons chives

    Boil unpeeled potatoes in salted water for 25-30 minutes or until fork inserts easily. Slice into 1/4-inch slices. Add onion to warm potatoes. Mix together eggs, pepper, celery, pimento, ripe olives, and parsley. Add to potatoes and onions. Add mayonnaise to moisten. Season to taste.
