Grilled Steaks with a Martini Twist

4 boneless steaks, 1 inch thick
1/4 cup finely chopped green onions
3/4 cup gin
1 tbs olive oil
1 tsp finely shredded lemon peel
1 tsp tricolored peppercorns, crushed
2 tbs sliced pimiento-stuffed green olives

Recipe
Trim fat from steaks. Place steaks in a plastic bag in a shallow dish. In a small bowl stir together the green onions, gin, olive oil and shredded lemon peel. Pour over steaks, seal bag. Marinate in the refrigerator for at least 30 minutes, turning occasionally. When ready to cook, drain steaks, discarding marinade. Press the crushed peppercorns onto both sides of the meat. Place steaks on a preheated grill rack directly over medium coals. Cover and grill until steaks are cooked to desired degree of doneness, turning once halfway through grilling. (Allow 14-18 minutes for medium rare and 18-22 minutes for medium.) Season to taste with salt. Garnish the steaks with sliced olives and lemon peel strips. Serves 4.
