Grilled Tomato Stacks

2 firm, ripe beefsteak tomatoes (about 1 pound total weight)
1-1/2 tablespoons extra-virgin olive oil
Salt, to taste
Black pepper, to taste
1/2 teaspoon sugar
8 whole fresh basil leaves
1/2 pound mozzarella cheese, cut into 4 slices
Preheat the grill. Meanwhile prepare the tomatoes: Trim the top and bottom from each tomato and then cut each one crosswise in half, yielding a total of four thick slices. Put the slices on a plate, drizzle them with olive oil and turn them in the oil to coat them thoroughly.
Carefully oil the grill rack. Sprinkle the tomatoes on both sides with salt, pepper and sugar. Place them on the grill rack and cook until their undersides are golden, 1 to 2 minutes.
With a spatula, turn over the tomato slices. Immediately top each slice with 2 basil leaves and a slice of mozzarella. Cover the grill and cook until the cheese has begun to melt, 3 to 4 minutes more. Transfer the tomatoes to a serving plate and serve immediately at room temperature.
Yields 4 servings.
