Jackie Gleason's Classic Coleslaw

1 small head green cabbage (1–1¼ lb.)
2 small carrots, peeled
1/3 – ½ cup rice vinegar or white vinegar
1 Tbsp. sugar
½ tsp. salt
¼ – ½ tsp. fresh cracked pepper
½ cup mayonnaise
Recipe
Shred cabbage and carrots by hand or in a food processor bowl using the shredding blade. Transfer to a large bowl. Toss with vinegar, sugar, salt, and pepper. Cover and chill. Just before serving, stir in mayonnaise to coat. Makes 4 cups (6 to 8 servings).
