    Three - 2 pound chickens, cut into quarters
    1 cup olive oil
    1/2 cup dry white wine
    1 tablespoon dried oregano leaves
    1 tablespoon dried rosemary leaves
    2 garlic cloves
    Salt
    Fresh marjoram leaves

    Marinate the chickens for 1 or 2 hours in a sauce made of the olive oil, wine, oregano, rosemary and garlic.

    Barbecue the chickens over a slow fire for about 1 hour, turning the pieces frequently. Sprinkle salt over the chickens during the last 1/2 hour of cooking time. Just before the chickens are finished, burn a big handful of marjoram in the fire. The spicy smoke adds a pungent flavor to the meat.

    Serves 6 to 8
