New York Deli Brooklyn Potato Salad

6 medium new potatoes
2 teaspoons sugar
3 tablespoons white vinegar
3 tablespoons vegetable oil
salt and pepper to taste
1 cup mayonnaise
1 teaspoon celery salt
1/4 cup finely chopped carrot
1/4 cup bottled pimento, finely chopped
Recipe
Boil the potatoes in lightly salted water until just tender. When they are cool enough to handle, peel and slice them about 1/4 inch thick. Put in a bowl.
While the potatoes boil, mix the sugar into the vinegar, stirring to dissolve it. Whisk in the oil, salt and pepper. Pour this mixture over the warm potatoes, and mix gently.
Mix together the mayonnaise, celery salt, chopped carrots, and pimento.
When the Potatoes have cooled, mix them with the dressing.
