Orange Roughy with Chili Lime Sauce

7 orange roughy fillets
wood chips , soaked and drained (apple or hickory are best)
vegetable cooking spray
Brushing sauce:
1 tsp olive oil
2 TBS fresh lime juice
1/4 tsp freshly ground black pepper
2 TBS parsley, minced
Chili Lime Sauce:
1/4 cup chili sauce
juice of 1/2 lime
Prepare brushing sauce, mix all ingredients together and let stand at least one hour.
Prepare chili-lime sauce by mixing two ingredients together. Set aside.
Prepare grill, when coals are hot add the wood chips. Brush fish with the brushing sauce and grill fish in a fish grilling basket that has been sprayed with the cooking spray. Cook 2-3 minutes then flip, brush with more sauce and cook another 2-3 minutes. Do Not Overcook.
Place fish on individual plates and top with a dollop of chili lime sauce.
