    Potato Salad with Mustard Vinaigrette

    2 lbs. potatoes, washed and boiled
    2 green onions, chopped
    1 - 2 tblsp. fresh dill, minced
    1/3 cup sour cream

    Mustard Vinaigrette:
    1/4 cup vinegar
    1 tblsp. Dijon-style mustard
    1/2 tsp. salt
    1/4 tsp. pepper
    2 tblsp. olive oil

    Recipe



    Cook and cool potatoes; cut into pieces. Add dill and onions, and top with dressing. Fold in sour cream and chill for 30 minutes.
