Roasted Beans with Garlic and Onions

Makes 5 servings
1 tablespoon olive oil
1 pound frozen lima beans, or up to 3-4 cups fresh favas, shelled an peeled
6 cloves garlic, large sized, peeled and halved or quartered lengthwise
1/2 cup green olive, pitted and sliced
1-2 tablespoon minced fresh herbs, or 1 -2 teaspoons dried summer savory, marjoram, thyme, and/or sage
Recipe
Preheat oven to 375°F. Spread olive oil into a 6 X 9 inch baking pan or an oval gratin pan. Toss everything together directly into pan and sprinkle with a little salt and pepper. Cover tightly with foil. Bake for 50 minutes or until the garlic is tender when pierced with a toothpick or fork. Transfer to a bowl and stir. Add more salt and pepper as needed.
