    4 md Sweet Potatoes
    1/4 c Vegetable Oil
    2 tb Lemon Juice
    1/2 ts Salt
    1/4 ts Pepper
    1 md Green Pepper, chopped
    1 sm Onion, chopped
    1 Stalk Celery, chopped
    Parsley

    Recipe



    Heat enough salted water to cover potatoes to boiling. Add potatoes. Heat
    to boiling; reduce heat. Cover and cook until tender, 30 to 35 minutes;
    drain.

    Cool potatoes; slip off skins. Cube potatoes; place in a glass or plastic
    bowl. Mix oil, lemon juice, salt, and pepper; pour over potatoes. Cover
    and refrigerate at least 4 hours. Stir in green pepper, onion, and celery.
    Garnish with parsley.
