Tomato Summer Basil Salad

Penne Pasta 1 lb.
Roma tomatoes 6-8
Fresh Basil Leaves, stemmed 1 Cup
Kosher Salt to taste
Coarse Ground Pepper to taste
Fresh Lemon Juice 1/2 Cup
Extra Virgin Olive Oil 1 Cup
Fresh Parmesan Cheese, Shredded
Recipe
1. Cook pasta until "Al Dente".
2. Blend olive oil & lemon juice.
3. While pasta is still warm, toss in dressing.
4. Chill.
5. Quarter tomatoes longwise, then cut in half (8 pieces).
6. Chiffonade the basil.
7. When pasta is cold, toss with remaining dressing and all other ingredients.
8. Season to taste.
9. Garnsh with fresh basil sprigs and parmesan cheese.
