Zucchini Parcels

4 medium-sized zucchini
1/2 teaspoon fresh oregano leaves
4 tomatoes, peeled, seeded and finely chopped
6 tablespoons butter
Salt and freshly ground pepper to taste
Parboil the zucchini for approximately 4 minutes in the salted water to which the oregano has been added. Drain; then slice each zucchini lengthwise into quarters.
For each portion, place four quarters on a sheet of heavy-duty aluminum foil. Add about a quarter of the chopped tomato, a few pieces of butter, salt and pepper. Wrap the foil securely around the vegetables, and barbecue them over medium-hot coals for approximately 15 minutes, turning the parcels once.
