    3 pounds beef roast
    1 envelope onion soup mix
    1 onion, chopped (we actually use very little onion, but this is the recipe)
    1 cup dry red wine
    1/2 cup water
    2 tablespoons olive oil
    1 cup salsa
    flour
    salt
    pepper

    Recipe



    Rub flour, salt and pepper onto all sides of the roast. On top of stove, heat oil in dutch oven and brown the meat on all sides. Place roast in crockpot, and add onion, onion soup mix, wine, water, and salsa. Cook on low setting for 8-10 hours or high setting for 4-5 hours. Remove the roast and shred the meat. Save about one quart of the liquid in the crockpot. Thicken with flour in a sacepan. Return the shredded meat and the thickened liquids to the crockpot. Cook on high about 30 minutes. (I always brown the meat the night before and let it sit in the refrigerator overnight.)
