Topside Roast with Sour Cream Sauce

1 teaspoon salt
4 pounds corner topside
3 tablespoons butter
1 medium onion, sliced
1 cup red wine
1 teaspoon salt
1/2 teaspoon black pepper
2 1/2 tablespoons plain flour
2/3 cup sour cream
Recipe
Rub the salt on the corner topside. Melt the butter in a large fry pan and brown the meat on all sides. Put into the slow cooker. Sauté the onion in the same fry pan until golden brown. Add the wine and scrape the bottom of the fry pan. Add the salt and pepper and pour over the meat. Cover and cook on the low setting for about 10 hours. Take about two tablespoons of the liquid from the slow cooker and mix with the flour in a small saucepan. Add the rest of the liquid and cook, stirring constantly, until smooth and thick. Remove from heat and stir in the sour cream. Pour the sauce over the meat and serve immediately.
