    Baked Maple Cup Custard

    4 eggs
    1/3 cup sugar
    3 cups milk
    1/2 tsp vanilla extract
    freshly grated nutmeg
    maple syrup to taste

    Preheat oven to 350 degrees Fahrenheit. In a bowl, beat the eggs with a whisk or wooden spoon. Beat in sugar and salt. Stir in milk and vanilla. Pour into four custard cups, each about 8 oz capacity. Top each with a sprinkling of nutmeg. Place filled cups in a baking pan. Fill pan halfway to the tops of the custard cups with boiling water. Bake in oven for 45-55 minutes or until center of custard is firm, which you can check by jiggling the cups. Serve either hot or chilled, with maple syrup on top.
