Banana-Meringue Rice Pudding

1 cup raw regular rice
2 cups water
1-1/4 tsp. salt
2-1/2 cups milk
3 eggs, separated
1/2 cup plus 6 Tbsp. sugar
4 medium very ripe bananas
1 tsp. pure vanilla extract (or vanilla bean)
1 tsp. banana extract
Recipe
Combine rice, water and 1 tsp. salt to saucepan. Bring to boil, cover and simmer until liquid is completely absorbed, I say around 15 minutes.
Add 2 cups of milk, simmer, stirring occasionally, again until milk is completely absorbed, around 30 minutes.
Beat together remaining milk, egg yolks and 1/2 cup sugar. Stir into rice mixture and cook over very low heat, stirring constantly, until slightly thickened
Slice bananas and add to rice pudding with vanilla extract and banana extract. Turn into 2 quart casserole.
Beat egg whites and remaining salt until stiff (but not dry) add remaining sugar, 1 Tbsp. at a time, beating until very stiff and glossy. Spread meringue over banana rice pudding, beginning around edge of dish and spreading toward center.
Bake at 400º until meringue is lightly browned
