    Butterscotch Rice Pudding

    1/3 C. raw white rice
    1/4 tsp. salt
    1-1/4 C. boiling water
    2 T. butter
    3/4 C. packed dark brown sugar
    1-1/2 C. evaporated milk

    Recipe



    Cook rice with salt and boiling water in a double boiler for 30 minutes.
    Combine butter & brown sugar in a skillet.
    Cook over low heat, stirring for 3-5 minutes.
    Add together, with the milk, to the rice.
    Cook for 30 minutes longer until rice is tender.
