Cake
10 oz pitted dates, chopped
1 cup golden raisins (optional)
1 cup boiling water
1 tsp. baking soda
1 cup brown sugar
1/2 cup margarine (1 stick)
2 eggs, beaten
1 3/4 cups flour
1 tsp. baking powder
1/4 tsp. salt
Syrup
2 cups sugar
1 cup water
1 Tbs. butter (optional)
3/4 cup brandy
1 tsp. vanilla

Cake
Soak chopped dates and raisins in boiling water with baking soda about half an hour.
Cream together butter and sugar until light. Beat in the eggs until smooth. Add the date mixture. In a separate bowl, mix together flour, baking powder and salt. Fold flour into creamed mixture. Turn the batter into a PAMed 9 X 13 inch baking dish. Bake at 350F (or 325F if glass) for 35 to 40 minutes.
Syrup
While cake is baking, boil sugar, butter and water for about 5 minutes. If made a little too soon, bring back to a boil just before the cake is done, remove from heat and add brandy and vanilla.
Immediately after the cake comes out of the oven, poke it all over with a skewer or toothpick and ladle on the syrup. Try to saturate the cake evenly.
Serve the pudding hot or cold with ice cream or yogurt.
