    1 pound black cherries (may use fresh, canned or frozen)
    3/4 cup all-purpose flour
    1/2 cup sugar
    Pinch salt, if desired
    3/4 cup egg substitute
    1/4 cup cognac
    1 teaspoon vanilla
    2 cups skim milk
    Butter-flavored cooking spray
    2 tablespoons powdered sugar

    In a mixing bowl, blend together flour, sugar and salt. Add egg substitute. Add cognac, vanilla and milk; beat until smooth. Prepare a deep 9-inch pie pan with butter-flavored cooking spray. Spread cherries on bottom of pan. Pour batter over cherries. Bake at 375 degrees for 60 minutes or until flan is browned, but still soft. Cool. Sprinkle top of flan with powdered sugar. Makes 6 servings Note: We have substituted the cherries with plums, grapes, apricots, peaches and prunes. If a canned fruit is used, drain fruit before using in recipe.
