Chocolate Cherry Bars

5 cups walnuts - coarsely chopped
1/2 cup sugar
1/4 cup butter - melted
3 cups cherries - dried
1/2 cup cherry juice
2 cups light brown sugar
1 cup heavy cream
2 ounces unsweetened baking chocolate - coarsely chopped
6 tablespoons butter

Prepare 1 9 x 13 x 2 inch nonstick baking pan. Preheat oven to 325 degrees F. Toast the walnuts in a baking sheet until slightly golden (about 10 minutes). Remove and allow to cool. Turn the oven off (no more baking after this point)
In a food processor, process 4 cups of the walnuts with the 1/2 cup sugar until finely ground (don't overprocess or the walnuts will make walnut oil). Drizzle melted butter over mixture; mix well. Pat walnut mixture (using fingers) into bottom and sides of prepared pan. Set aside.
In a medium saucepan, heat dried cherries and cherry juice over medium heat. Bring to a boil and then remove from heat. Allow to cool to room temperature (about 30 minutes). Spread cherry mixture over walnut mixture. Set aside.
In a medium saucepan, heat brown sugar and heavy cream over medium high heat. Bring to a boil. Stir to dissolve sugar. reduce temperature and allow mixture to simmer for 15 minutes. Stir in chocolate, until melted. Add butter. Stir until melted. Add remaining 1 cup walnuts. Stir to combine. Pour chocolate mixture over cherry mixture. Spread evenly. Refrigerate for 2 or more hours.
