4 oz. semi-sweet chocolate
4 Tbsp (1/2 stick) unsalted butter
4 lg eggs separated
Pinch of cream of tartar
1/2 cup heavy cream
1. In double boiler, melt together chocolate and butter, stirring until smooth. Remove from heat and transfer to large bowl: Whisk in egg yolks, stirring well. Let cool to room temperature.
2. Beat egg whites with cream of tartar until stiff. Whisk a third of the whites into chocolate mixture; gently fold remainder.
3. Whip cream to soft peaks and fold in. Chill until set, about 1 hour.
