8 apples
1 tablespoon cinnamon
1 heaping tablespoon of brandy or brandy extract
2 tablespoons water
2 cups all purpose flour
1 2/3 cups dark brown sugar
1/2 stick butter
1 tablespoon vanilla
1 egg white
Mix together thoroughly the flour, 1 cup brown sugar, butter, vanilla, and egg white. Grease the bottom of a bread baking pan. Take 2/3 of above mixture and press down in bottom of pan. Peel and take core out of 8 apples, then rinse. Place in bowl, put 1 tablespoon of cinnamon and a heaping tablespoon of brandy or brandy extract into 2 tablespoons of water and mix with apples, making sure apples are covered. Pour this into the pan and press down firmly. With the remaining mixture, add 2/3 cup more brown sugar and place on top; pat down over apples.
Cook at 375 degrees for 45 minutes, checking to make sure liquid is soaking into the top mixture. If liquid isn't soaking in, take a spoon and press on the top until liquid comes over it. Cool on wire rack before removing from pan. Serve warm or cool.
