Fudgy-Chocolate Brownies

1/2 cup butter or margarine
3 oz. unsweetened chocolate
1 cup sugar
2 eggs
1 tsp vanilla
2/3 cup all-purpose flour
1/4 tsp baking soda
1/2 cup chopped nuts (optional)
1 recipe Chocolate Cream Cheese Frosting with Drizzles or Caramel Topping (optional)
Recipe
In a medium saucepan melt butter or margarine and unsweetened chocolate over low heat, stirring constantly. Remove from heat; cool.
Meanwhile, grease an 8x8x2- or 9x9x2-inch baking pan; set aside. Stir sugar into chocolate mixture in saucepan. Add eggs, one at a time, beating by hand just till combined. Stir in vanilla.
In a small mixing bowl stir together the flour and baking soda. Add flour mixture to chocolate mixture; stir just till combined. Stir in nuts, if desired. Spread the batter into the prepared pan.
Bake in a 350 degree oven, allowing 30 minutes for an 8-inch pan or 25 minutes for a 9-inch pan. Cool on a rack.
If desired, frost with Chocolate Cream Cheese Frosting, then spoon or pipe with Chocolate Drizzle and/or White Chocolate Drizzle. Or, drizzle with Caramel Topping.
Makes 16 bars.
Chocolate Cream Cheese Frosting with Drizzles:
1/2 cup semisweet chocolate pieces
1-3oz package cream cheese-softened
2 to 4 Tbsp powdered sugar
1 recipe Chocolate Drizzle and/or White Chocolate Drizzle (optional)
In a small saucepan melt semisweet chocolate pieces over low heat, stirring constantly. Cool. In a small mixing bowl stir together the cream cheese and sugar. Stir in chocolate till smooth. Spread frosting over cooled brownies. Let frosting set, then top with Chocolate and/or White Chocolate Drizzles, if desired.
Chocolate Drizzle:
In a small saucepan combine 1 ounce unsweetened chocolate
2 Tbls margarine or butter
2 Tbls milk
Stir constantly over low heat till melted. Remove from heat. Stir in 1 cup sifted powdered sugar and 1/2 tsp vanilla, beating till smooth.
White Chocolate Drizzle:Prepare Chocolate Drizzle, substituting 1 ounce white baking chips (1/4 cup) for the unsweetened chocolate.
Caramel Topping:12 vanilla caramels, 1 Tbsp margarine or butter, 4 tsp milk. In a small saucepan combine caramels, cargarine or butter, and milk. Stir over medium-low heat till smooth. Cut unfrosted brownies into bars; drizzle the warm caramel mixture over bars. Allow the caramel to set before serving.
